There’s something undeniably elegant about the earthy marriage of mushrooms and truffles. These truffle-stuffed mushrooms transform the humble fungi with a savoury pork filling infused with premier truffle pieces and their aromatic jus. The clever addition of fresh tomato slices on top adds vibrant colour and also serves the practical purpose of locking in moisture and driving the luxurious truffle flavour deeper into each bite. Perfect for special occasions or when you simply want to treat yourself to something extraordinary.

Ingredients
- 500g minced pork
- pinch of salt and pepper
- 1 diced shallot
- 1 egg
- 8 large mushrooms
- 2 tomatoes
- 1 can of Truffle Crumb
- Premiere or whole truffles for presentation

In the Truffle Pieces can, there are 2 ingredients – the Truffle and the Gourmet Truffle Jus. They can be used together or separately. Each is as important as the other.
Method
Prepare the filling:
- Place minced pork in a mixing bowl
- Season with salt and pepper
- Add finely chopped shallots
- Mix in truffle crumbs and truffle jus from the can
- Add one egg to bind the mixture together
- Mix thoroughly until well combined
Prepare the mushrooms:
- Remove the stems from the mushrooms
- Peel the mushroom caps
- Lightly coat a baking dish with olive oil
- Arrange the mushrooms in the dish, hollow side up
- Season each mushroom with salt and pepper
- Drizzle a little truffle jus inside each mushroom cap
Fill the mushrooms:
- Form the pork mixture into balls
- Place a ball in the center of each mushroom
- Add slices of truffle on top of the pork filling
Add the topping:
- Cover the filling with sliced tomatoes to prevent the truffles from drying out
- The tomatoes help lock in moisture and force the truffle flavor downward into the filling
- Season with a little more salt
- Drizzle with olive oil
Bake:
- Place in a preheated oven
- Bake for approximately 20 minutes
- Remove and serve hot
